Imagine this in a big and busy kitchen during prep... 20 knives doing animal sounds.
Caught Ming Tsai- Simply Ming(?) on PBS last weekend.
Normally he uses those smallish, ceramic bladed jobbies.
On this particular episode he had something that looked like a nessmuk style skinner on roids.
Kind of a tall, swaybacked Santoku with a distal hump on the spine...sure looked butt ugly, awkward, and very limiting.
