    I'll tell you how, it's a warm potato. If he tried that with a wet cold potato like 99% of the potatoes I cut in a pro environment he'd be in for a world of stiction. There's nothing special about the grind at all.

    My Kato is cutting potatoes even better when they're cold I have Kono HD which is worse cutter.

    Exactly. Kato has more material for convex/concaving. I'm not familiar with the particulars on the grind but I have seen them up close and there's definitely more to work with.
