    1st knife is an udon knife. 2nd knife is a honesuki, but he's using it with his left hand so the front of the knife is against the ice and we see the back side. 3rd knife looks to be a petty with the tip broken off. All typical knives we discuss and use here, but re-purposed for his specific tasks. Do not know brands.

    His hand must be burning from the cold. He complexion is calm, but he does flinch his jaw occasionally. I suspect he has to apply some pressure to get it to cut ice so cleanly.

    yeah and I think that ice isn't super cold or it would shatter when he cut it.
