    Is there a significant difference between 52100 and A2?

    Not very significant. 52100 will get sharper but A2 will hold edge longer. A2 is semi-stainless, while 52100 is carbon steel (though with 1.5% chromium and 600-800 grit polish, 52100 makes it less susceptible to rusting than Japanese white or blue). The special HT on A2 is to make the gap even smaller. I am very eager to hear reviews on the performance.

    225mm Practice Laser Gyutos in 52100

    These are from the batch I ground before vacation and determined to be too "laserish" for my liking. I gave them a second look and determined that 3 knives of the batch are actually pretty good as is and will comfortably fit in the category of lasers.

    They all have pretty stiff spine but are very thin at the edge and above. These will cut very well through dense stuff sweet potatoes, squash, etc. Food release should be good, depending what your expectations are. The heat treatment on these is very good, with stropping, the edge should last months.

    These are available without handles, will be finished to 600 grit, machi cut and tangs tapered. As with my other practice knives, I will not put my maker's mark on them, but I do guarantee them to be good knives and will take them back if they don't meet your expectation.

    As I assess my work load for the coming months, I find less and less time for redoing knives that I wasn't happy with, so these are available because of that reason.

    First three "I'll take it" get them.
