    This is one of the last Shiges I still have on hand from the time when I uses to source then and customize them.

    Custom handle and saya - $350 (AAA koa set, unless you provide your own wood).

    225mm Practice Gyuto

    $340 Shipped. Ready to ship tomorrow.

    52100 (~62RC), D style cocobolo handle with blackwood ferrule and n/s tip. Blade features hand-rubbed finish.

    I offer it as a practice knife for two reasons. It has an earlier heat treatment (very good, but my latest is a little better) and it is a little thinner than knives I offer now. It is by no means a laser (it has enough thickness at the spine) though it is very thin at the edge and above the edge. It will cut very well, particularly if you are interest in precision cuts.

    Folks, I can't type as fast as some of you. I am on the road teathered to my smart phone so that doesn't help either. Was to go and add some stuff to the description, but the knife has been sold already.

    It's 50/50, though it is for a right handed person. It comes with 7 day warranty (full refund bar return shipping).
