    November is approaching, so four more 225mm gyuto available. These are lasers, but as with all my knives, they have no flex at the handle and very little flex on the spine. Will initiate cut very well and release food reasonably well.

    Same deal, try it and if you like it, keep it, if not, return it. Somebody pointed out to me that these would be great knives for DIY handle guys. These will come ready to go, polished, sharpened, machi squared and tang tapered (still need to do most of it). Some will ship this week, some early next week.

    3 x 52100
    1 x 19C27 (stainless)

    $245 shipped.

    First four "I will take it" get them. Please specify the steel.

    Is it just the camera angle or are the profiles of the knives on the right all slightly different?

    Not sure. I profile them by hand, so there might be a little difference from one knife to another - some are little pointier than others, but the lengh of the flat spot and the edge curve is similar on all knives.

    19C27 has a little narrower and flatter profile. It wasn't a part of the batch. I might shorten slightly and re-profile it similarly to 225s.
