    how should I approach it out of the box? hit it with the beston 500 and then the 1200 then 6k?

    I would recommend the beston 500 for thinning the hiromoto. Then continue with the regular progression. With a little work they are great knives.

    What's the difference between Bester 1200 and Bester 1000 ? In understand most people recommend 1200, so I bought one and I'm waiting to arrive and I'm curious. Thanks.

    The 1000x feels hollow where the 1200x feels solid. The feedback on the 1200x is a tad better in that it just feels good. The 1200x seems to wear a bit slower & cut a slightly crisper bevel.

    All that said, some people who test them side by side prefer the 1000x over the 1200x.
