This has nothing to do with knives or cooking.

It's only obliquely related to sharpening.

But somehow I thought some folks around here might like it.

I've never seen a pen do that before, and my dad had several fountain pens.

That guy has some epic level penmanship.
 
I'm guessing the customization is the flexibility of the nib and special grinding of the tip that allows calligraphy-like writing for someone with great penmanship.
