    Whatever you are cutting with now will soon be changed into sharper and more expensive. The sharpness means that the cuts in your wallet won't hurt a bit

    This whole site is one big temptation, I'll avoid the BST for as long as I'm able.

    I'm currently using;

    Misono UX10, 240 mm gyuto
    Yoshihiro, carbon 240 mm gyuto
    JKC Hattori 210 mm gyuto
    JKC KAGAYAKI VG-10 240 mm gyuto
    Hattori HD 105 mm petty
    And several Tojiro DP's, a nakiri, honesuki and a petty.

    I've been looking at Sujihiki's for a while now.

    I've also got some German knives but they don't see much use. I've only got one carbon knife, for now.

    That's not a bad line-up. Sounds like you get a 300 suji and you're done.
