Home made honesuke. Started life many moons ago as a Dexter 48910 before it got into an argument with a bench grinder.

Got a Dexter 45A12H to practice sharpening skills on for $20, and a free unmarked Sab that needs some love and tip repair.

Looks like the Dexter had the belly flattened significantly, and I kind of like the profile. Glad there's no bolster to get in the way of the stones.

Old dexters are surprisingly nice knives. That's a good find.

Looking forward to playing around with them! Though you jerks in this thread have me eying up forgecrafts in the meantime. Why do they and some Old Hickory have those parallel depressions near the spine? Are they integral to the manufacturing process?

Sorry guys. I've dropped the ball on a thread that I started (and an awesome one!). So, to re-kick things off, here's my latest refurb that I did for a customer who has become an incredible resource/sounding board for me. He does lots of butchery, loves carbon, and this one is a beauty. I started with the middle knife in the top pic and after some really enjoyable refurb work, we ended up with the last picture. Let me know what you think. I love these projects!
