Just signing in. I am a hobby chef and have been into kitchen cutlery for five years now.
I am also a minimalist and currently have only six knives in my stable--all of which are used daily.
One of these knives is a 10" Pierre Rodrique custom, which he made for me over a year ago. I promised him a full review after some cutting time and I am now ready to deliver (with pictures of course).
