The Nakiri is 185, the Gyuto is 210
The gyuto has ironwood and maple Burl.
The Nakiri is ironwood and something really dark....Maybe ebony.... Del picked it out.
Both knives are light and nimble..... The etch is very deep; easily palpable.
Haven't used them much, but I really like the profile of the gyuto.
I sharpened them up through the Kitayama ..... It left a nice shiny edge to contrast with the dark Damascus.
