I've just received a vintage LF&C slicer from Lefty's Sharp and Shiny Shop and I must say that this knife is amazing! It tapers 3mm in front of the bolster to basically nothing at the tip and has a nice amount of flex near the tip, Which I think will make it perfect for trimming and filleting. I'm touching up the edge so I can clean a couple tenderloins and Elk striplions with it at work tomorrow. Thank you Tom for the great customer service and fast delivery, I'm sure I will become a repeat customer in the future!
