Here are the pics of the turkey I fixed for my wife's work Thanksgiving party.

It was a 2 hour smoke, then roasted at 325ºF until the breast reached 160F.

I brined it first, then let the skin air-dry in the fridge before smoking.

I have more detailed instructions here in the story I posted for the paper.

That looks delicious. I'm smoking a hotel breast on the grill tomorrow.
