I would take the handles off for other projects, and ditch the blades. I'm not a fan of 440.
 
looks and form are a lot more important than steel when it comes to steak knives. i bet they are fine.

440 for steak knives is just fine.

Didn't know Hen & Rooster did anything but pocket/folding knives.
 
I know this is kinda off topic, but Hen and Rooster has a strong following in the pocket knife community known for the same. Straight edge steak knives for that price, you cant beat it.
