Just wanted to introduce myself. My name is Bennett Greenberg. I love knives, always have and I am in the process of upgrading my home kitchen knives from Forshners and Henckles to some higher quality knives that I can eventually pass on to my kids. Also looking at the best way to keep them sharp. I volunteer at a local soup kitchen and sharpen about 50 knives a week there as well. I'll be posting questions soon, looking forward to a good education here. Thanks
