How to properly set a bevel?

Hi all,

I am fairly new to sharpening and have been looking for quality information for a while and just found this forum. This place looks incredible.

I am wondering if anyone can explain how to properly set a bevel. Thanks!
 
Look at Jon's YouTube clips, "Japaneseknifeimports" next to a personal instruction on knife sharpening they are the best thing I've found.
 
i always wonder what people have in mind when they talk about setting a bevel... most knives already have a bevel and you either just follow it or make adjustments. Pretty much just pick an angle (something reasonable, but outside of that it doesnt really matter that much for now), sharpen until you have a burr (consistent and even from heel to tip), do the same thing on the other side (remembering that the burr will form slightly faster on the second side and you need to then consider how centered you want your edge), remove the burr, and cut a bunch of stuff ;)
