I took two bottles of inexpensive Balsamic and added one Macintosh apple, stick of cinnamon, piece of ginger, 10 pepper corns, tbs vanilla, and dash of clove oil. I reduced that by 2/3rds and the resulting syrup is absolutely delicious. I could put it on ice cream, but I drizzled it over some caramelized Brussels Sprouts and it was fabulous.
 
That sounds great! Wish I had some with some pound cake right about now. It might actually make fruit cake edible!
 
It started out at 40oz. and reduced to one cup after straining - less than I thought. After I strained it I pushed the gick through and saved that paste for another use. Actually I used some of that for a fruit dip tonight and it's really good.
 
I love a good reduction. Makes me want to go out and get some good Balsamic.
