A slightly fun while informative thread. What gaps or opportunities do you see in the world of knives?

I mention this as I see what I consider a very significant gap in that there are no (to me) well known custom Japanese (based in Japan) knife makers. I know that there are makers that will do a blade stle to a specific length etc. but I mean the full monty ie. handles, Damascus patterns, exotic materials.

I think a small well reputed Japanese maker who would do all this kind of custom work could become very popular and flourish with some well placed marketing. Japanese Kramer beater?!

Any other opportunities to be had out there?
 
Carter? Though not in Japan anymore...he already has the marketing down pat. I think that Jon uses these small specialty makers to do his knives, I'm sure the market is there it's just a matter of making the connections.
