Aogami Gyuto Recommendations

Okubo blue 2 is superb, feels better on stones than Watanabe/Toyama but has similar/maybe slightly better edge retention. He makes workhorses with voodoo food release.

Watanabe Pro/Toyama reputation preceeds it. Excellent, hard blue 2.

I really like Shindo's too.

Just throwing it out there, Yosimitu Kajiya.

Ide-san usually works in Shirogami 2 but he also works with Aogami 2. His aogami knives are a little taller (48-51mm) than his Shirogami (46-49mm). He's told me he prefers to do a KU finish as a polished finish can warp the knife.
