Kanji Help on My Grandfather's Knife

Hi all! I have a santoku knife from my late grandfather's collection that I need help with identifying. He used to visit Japan often in the 1980's and 1990's and had a good variety of Japanese knives, but unfortunately at the moment I only have the Santoku.

From my research on the existing threads here, I figured out the first kanji and the last 4, which I believe say hand (1st), made (4th), blue steel (5, 6th). I'm stuck on the middle two kanji though, which I assume would be the maker himself? There's also some writing on the other side of the blade that I haven't tried to translate yet because its so stylized.
