Not sure which criteria get a maker on your radar, but for french based ones, aside from the well known ones such as Yannick, Bryan, Milan and Adonis, and in case you've never seen them, you could add Thomas Raffy (IG : @thomasraffy) and potentially myself. Then if someday you need a custom handle fitted on a blade, Pierre-Gilles Houdart does great handles (IG : pierregilleshoudart).
