    Hi Dave- a quick question if I may- do you have much experience with Hiromoto Honyakis? I'm tempted by a white 2 240 gyuto that popped up in my search for an AS gyuto. Thanks!

      I've thinned/refinished and rehandled a few of them. The bolsters and handles are rough. The blades seem OK but not as hard as most honyaki knives.
