Crazy that this one is still here. No way that I could buy it, but I‘d definitely buy a raffle ticket or two. Stefan

Most Impressive Hand Carved Octagonal Wa

Very nice, I just wish he had included the really interesting part - drilling the dang thing ;) Stefan

What knife was your first “crush” ?

I thought I was lucky to get some Zwilling knives for employee prices when I was in my young adult years in Germany - until I tried to sharpen the dang things. A friend got a set of Globals and was raving about how much better Japanese knives are. I started looking around and somehow I came...

Brass and other alloys in handles

I am really not sure how even traces could make it into the food from a handle as long as the cook sticks with basic kitchen hygiene practices. That said, my favorites are people who contemplate the potential hazards from something like knife handles while smoking a cigarette... Stefan

Have I bought the most expensive handle?

This is Macassar ebony, a more brownish variety which is less likely to crack than the deep black Gaboon Ebony and therefore mostly used in upgraded Japanese handles. For an upgrade, the price is a little stiff, but Watanabe’s handles are usually the best non-custom ones I have seen. Stefan

    Trump and Kim

Well, I do believe that we are not threatened by a war in the near future - not because of Trump and Kim but because everyone will be busy watching soccer for the next 5 weeks. Other than that, I agree with Robert de Niro. Stefan

    Akebono

Local hero in his hometown Waimanalo, HI, after his career in sumo. I have been out of the knife-buying game for too long, had never heard of Akebono knives... Stefan

What're your current favorite knives? Here’re the faves of my rotation.

Still love my 195ish Carter HG funayuki and a pimped-up 240 Hiromoto AS with a handle by Fish/Greg. Just putting a handle on a 225 gyuto practice blade from Marko that looks promising. Also rehandling A 150 Hiromoto AS petty, missed it after selling the old one off, so I rebought it. Thinking...

    The Wok Shop.

FWIW, I came for the same conclusions with the caveat that I was last there about 9 years ago. Underwhelmed a bit and not a very inviting place, even though I do like small cramped straditional stores. Bought a wok that I never used for lack of a decent burner. Stefan

    Anthony Bourdain dead at 61

In the beginning - after reading KC - I found him a bit too rough around the edges and expected him to be an arrogant sob. That clearly changed over time. It was strange to read about his last days. I had spent a few days in the Alsace last summer and ate at the place he stayed at with ER...

What were you doing at 13 yrs of age?

I know, I am weird - I actually enjoyed school. Discovered girls and slow dancing to unspeakable music. Got drunk for the first time. Leaving with the guys on my bike after school, came back for dinner, nobody knew where we were and nobody panicked over it. Stefan

210 Gyutos, Pettys: Takeda, Wakui, Fujiwara, Hiromoto, More

Nice, you don’t see Fish-handled knives popping up for sale often. Very attractive pricing, also, that Hiro petty is a no-brainer - (I would, but I have 2 of them already...). GLWS, Stefan
