    Thanks everyone for the suggestion i got a list of knives i got to study now before i buy myself an early Christmas present. So far the list of reqs: Yoshi SKD/White geshin/ashi ginga Matsubara blue #2 Kono HD Kono YS shibata kashima Anything else i should consider?

    Yoshikane got the exact profile i like but not the biggest fan of white steel tbh ive had 1-2 white steel blades the edge just doesnt last as long. I love that my wat and toyama can go through hours of prep before they need a touch up

    Haha i actually deleted the last sentence before posting but i was gonna mention how nakiris are really fun to use and do have their benefiets and i completly agree a gyuto can do pretty much what a sujihiki can do thats why i only recommended one if he really wants three different knives

    A couple things you really dont need to spend 800 dollars to get some high quality knives. Nakiris are also pretty redundant if you also want a gyuto as a gyuto can do everything a nakiri can. Lastly any knife can be a sharp knife and how long it stays sharp really depends on how you treat it...

    Yep i want my work knives to look as boring and inexpensive as possible less incentive for someone to steal them. Also all my work knives get put to the test and worked at work dont wanna bring my nice handles and iron clad knives bc they will get dirty
