    Interesting! They steam it before freezing to prevent crumbling. Crumbling is exactly what happened when I just froze a block of tofu straight from the fridge, and defrosted afterwards. Wasn't impressed by how it turned out. So this may explain.

    What kind of surface finish do you use? It is nice and satin shiny, classy. Sandpaper grit? Oil type?
