    Loving the 210mm Kei Kobayashi so much I got a 150mmpetty. The Damascus is beautiful but doesn't have the makers mark. The handle ties them both together.     Not having a dedicated sharpening station. I clear a space on the kitchen bench, I've been thinking about this movable table idea for a while and finally did it. When the wheels are locked I can still rock it back and forth but it's not too bad. With heavy grinding I might have to butt it up...

    Wat pro santoku and wat 1000grit followed by home made cow leather strop loaded with flexcut gold

    Iyoto finish, which is usually the pre finisher, finer than 1000, coarser than ohira suita. May not count as coarse enough finish for this test. Will try with the 1000 when I get the urge to have another go at it.

    Nothing fancy, had to try it while it was still hot. Unfortunately I should have picked a better area or a cheap beater, made contact with the plate and couple of accidental taps from the fork, then to finish it off hit the tip into the toaster. At least the sandwich was nice :)

    That's awesome. I've been looking at mobile prep stations to set up for a sharpening station. Just to have the convenience of being able to move it and store it more easily. My rock's still live on a cabinet in the lounge 😔

    Uraoshi Sharpening - Blade side

    I've never sharpened owned or used a single bevel. From what I've seen, I thought the flat side was meant to stay flat. Will be interesting to see what those more experienced will say.
