    Good to know that your wife enjoying using a decent knife. My wife prefer a victorinox serrated 150mm over anything else, she once used my carbon steel santoku and just wipe and left it in the drawer, i found out the day after that the steel has turned orangish.. 😭

    I find it easier to brunoise eshallot for oyster dressing, dice garlic and julienne chilli sticks with shorter knives

    Can also put some in when making ragu. i put some inside ragu (my favourite boar ragu /rabbit ragu) and cover it with cartouche to keep it submerge. 160’c 4hours

    Well...... i start with 2 gyuto 1 petty 1 suji 1 yanagi 2nakiri and 1 deba And now... I can’t mention it here, im afraid my wife might put a spy on me ;) i can pm you if you really want to know

    My jnat setup for now: Blue aoto < aiwatani < uchi my advice is try to get an easy to use jnats first (soft/middle range) then slowly advancing to hard/top range

    If you want to do a sharpening quickly, synth stones are the way to go. If you enjoy sharpening and wish to go beyond than just sharpening, go with jnats. Start with something in between 2-3k then move the way up.

    True.. Watanabe at its price right now is a good value, if it goes any higher than that, i will probably spend the money elsewhere.

    Nope. Not my thing It is not hard to pick up a hard wood handle in OZ. Chefsarmoury offers a lot of hardwood handle with pricetag around aus$50-80 (not include fitting) they only offer that for in-house customer only(as every knife tang is different so it need to be inspected before fitting)...

    Yeah, he charged a lot for the handle. im getting a gyuto, petty and honesuki. He still charges me delivery fee for the second and third knife (¥400 extra for each) doesn’t specify why. When other vendors would have offer a free shipping already
