    Yoshikane vs. Gesshin Ginga

Just wondering? Ever heard of the Van Halen song: The dream is over?

    Yoshikane vs. Gesshin Ginga

Hey, that's the best part of the whole thing! Absolutely love love love the flatness.

    Best knife for segmenting fruit?

If it really is the splurge piece and you want something a bit special, that Yoshikane sure is nice and the steel holds well with acidic fruits too. Akifusa will be just as good for the job for a lot less $ and with even better edge retention, absolutely a great knife you'll be happy with, but...

Knife recommendation needed for a friend

Hard to argue with anyone appreciating Wakui gyutos. Also I've never understood all the love for Victorinox kitchen knives. So there's that. They're not bad. Just very very mediocre which is fine I guess? Anyway.. She might be screaming for a gyuto and wants a carrot slayer. True, but IMO...

    Yoshikane vs. Gesshin Ginga

So you’re finally ready to part with the Zenso?

Knife recommendation needed for a friend

Although the idea of putting more emphasis on the gyuto is good, in this case I’d go a different route. My experience is that the ladies gravitate much more towards petty type small-ish knives so I would suggest a bit nicer petty in the mix. How about a Mac petty? I’d go for the pro line. Those...

    Just one stone. Go

I think I'de be ok with just the Sigma Select 3000. It's just course enough and fast enough for all the different steels and still fine enough not to piss me off. Leaves a dark and ugly "kasumi", but other than that pretty versitile.

Laser gyuto for professional kitchen recommendation

Mine is maybe 2-3 months old and weighs 227g. I'd say the one I have is more on the fatter side of middle weight. Definitely not a laser, but the grind is outstanding and cuts really well. Really happy I got a fatter one as that's what Toyama made his reputation with. But many have talked...

Laser gyuto for professional kitchen recommendation

My Ginsan was a production version from the second batch, maybe? My B2 was also pre production version without kanji, only stamp, that James had laying around, but he put a full K&S treatment on it before shipping it. I'm holding on to mine because they might not be made again ever? That new...

    working with concave grind

Are you looking for a SS, SS clad carbon or full carbon?

    working with concave grind

I think there's a miss use in the terminology and actually the unintentional concave talked about here really means low spots in the grind? And sure hollow grinds benefits are subjective like every other design feature on a knife. Just like some like thin knives and some thick ones. it's all...
