It’s a beast- work horse choil and got some weight to it. Thin thin behind the edge. Pretty flat profile on the kiritsuke of mine. very rustic and cool aesthetic. Haven’t spent that much time with it tho.
Carbon pans took a bit to get used to, but love them now. The debuyers and matfers aren’t too expensive. Buy one and see how it works. Once you get it seasoned it’s not as much work as you’d think. I second @ashy2classy Debuyer mineral B 12.5" it's bit heavy, but it's great and is less warp prone.

I picked up a 240 SLD and it’s assertive. it’s unique for stainless w its girth and grind. It’s kinda Yoake M (migaki line) like, but it’s not quite as thin BTE. Does pretty good with the apple test, some stiction and better release than Yoake M.

These Komorebi damascus knives are sweet. I have me a 210 & 240. For those curious/skeptical about the scale like pattern, that's a result of the etch and can be sanded/buffed out. Pretty intense etch tho... If this hangs around, might have to pick it up. Great deal.
This is a sweet one. I have a couple in this line and no doubt this is more beefier version (just on weight alone). CKC listing has it a 178g. I agree with folks comment on the Matsubara. Note: Sakai Kikumori versions retail for more than Matsubaras.
