    Nigara Hamono sg2 240 mm gyuto..any good?

Yes they vary quite a bit. I have one of each. The Damascus is a workhorse type with thick spine and the grind is dramatic from edge to top of bevel. It will wedge on hard things like carrots but have good separation. I like the feel of this knife ( heavy assertive) & the look (rustic). The blue...

    Nigara Hamono sg2 240 mm gyuto..any good?

It’s a beast- work horse choil and got some weight to it. Thin thin behind the edge. Pretty flat profile on the kiritsuke of mine. very rustic and cool aesthetic. Haven’t spent that much time with it tho.

What pans are you guys personally using?

Carbon pans took a bit to get used to, but love them now. The debuyers and matfers aren’t too expensive. Buy one and see how it works. Once you get it seasoned it’s not as much work as you’d think. I second @ashy2classy Debuyer mineral B 12.5" it's bit heavy, but it's great and is less warp prone.

    AirBNB knives

So I’m in the Caribbean at an Airbnb and there’s only one knife with a rounded edge dull and it’s stainless ☹️. That talk about using a brick to sharpen a knife… it’s way more work than imaginable. Looking fwd to seeing/hearing about similar experiences.

    Nigara Hamono sg2 240 mm gyuto..any good?

From nigara- I have the anmon (raindrop), KU hammered sg2 and recently a Damascus ginsan. They’re all different animals tho- The hammered sg2 is just as @Stevem627 described and is my favorite of the bunch for straight out of the box experience. It’s super thin behind the edge. The anmon...

Withdrawn Hatsukokoro Yorokobi SLD Stainless Copper Damascus Clad Gyuto 270 & 240

I picked up a 240 SLD and it’s assertive. it’s unique for stainless w its girth and grind. It’s kinda Yoake M (migaki line) like, but it’s not quite as thin BTE. Does pretty good with the apple test, some stiction and better release than Yoake M. Here are some caliper measurements (+~ fudge...

Withdrawn Komorebi Blue#1 Damascus 180mm (BNIB)

These Komorebi damascus knives are sweet. I have me a 210 & 240. For those curious/skeptical about the scale like pattern, that's a result of the etch and can be sanded/buffed out. Pretty intense etch tho... If this hangs around, might have to pick it up. Great deal.

SOLD Sakai Kikumori Nashiji Blue #2 Gyuto 212mm

This is a sweet one. I have a couple in this line and no doubt this is more beefier version (just on weight alone). CKC listing has it a 178g. I agree with folks comment on the Matsubara. Note: Sakai Kikumori versions retail for more than Matsubaras.
