    Anyone has experience with Carter blue core

    I have Carter knives in white and blue. They all do exactly what I expect. I have tweaked them a bit to my preferences but they all perform very nicely. Sharpen easily and hold a functional edge for a very acceptable length of time.

    I generally finish up to 5 or 6k and finish by stropping with diamond paste. The resulting edge is very crisp but bites.

    Sukenari knives

    I have a Sukenari ZDP. It does hold an edge. I give it a light tune-up now and again and it keeps going. It's well crafted. It took a spot in my every day rotation and hasn't left for three years. The only other which has never left my every day kit is my Misono Swedish suji.

    I'm in Texas. The old school ones I'm interested in had engraved kanji on both sides and actual pakkawood scales instead of the plastic/ecowood stuff they're using now.
