    I would like to second Micro Mesh, it’s really expensive and works really well. I would also like to add that mirror polishing to 12000 grit creates too sticky of a knife. Not much fun to unglue cucumbers and apple sliced from a knife.

    What knife for whole hog break down?

    A Takeda deba. Peels the face off a hog head in one piece. Cuts through joints with ease, etc. The only knife I regret selling on the BST.
