    Paper Towel Challenge

Yup. I don't regularly sharpen much. I just don't need to. The Paper towel test is just really kind of fun to see how long it will cut it without needing sharpening. It will slice anything I need regardless. The Aogami Super, Aogami #2 and 52100 hold a lot longer than the Shirogami #2 though...

    Paper Towel Challenge

So in the video it almost looks as if you are pulling the towel up not moving the knife down. I am holding my blades just as you do Oli. But I start at the heel up right by the edge of the towel. And pull the knife back and down at the same time while keeping the towel in the same spot. So as I...

Very cool. I'm in. Missing my dog still. First time without one if 46 years. Very strange.

    Paper Towel Challenge

Yup that is what I was talking about with the above post as what I call Oli's drop through. It almost looks like he just drops it through the towel. I have to slice it down moving the blade a bit more. Which is one reason I seem to have issues getting that last inch or so with the cleavers I...

    Paper Towel Challenge

@cotedupy already did that. Apparently at that level it doesn't matter much. I asked him this same question awhile back in the UK Stones thread and he went out and bought some different types.

    Paper Towel Challenge

I like in hand, but my favorite TOS weighs 5lbs. Don’t know what it is about cleavers. I have the hardest time making it to the end of the towel before I run out of blade. These are both just touch ups on the edges that came on the blades off my TOS brick. They were both cutting really nice, but...

Can’t wait to see what this one has in store. Just got it yesterday. That is from taco night this evening. Just a little cabbage, a tomato and a half onion.

Also bet you could get some sort of leg extenders to put it a a better height for use.

    Gyuto heel height

Seems preference is key and I think some of that has to do with your size and the size of the blade. I am more a cleaver guy so I like the height. I have a 213 x 52 and would say a 210 would need a 50+ for me. Also have a 260 x 61 and around this length a 60+ is ideal for me. I am 6’ with large...

    The Turkish Oilstone Matter

Yeah I sent you a link to that stone sold listing on the other forum, but you probably didn’t see it. Nice information. Seems to jive with the Cretan stone.
