I've got 2 carters, and they both are amazing cutters. His profiles are kind of all over the place, but once you find something that fits what you're looking for, I'd go for it.
I picked up an 8" miyabi gyuto on BST a while back for a really good price, so that is my 'guest knife'. I'll let people use others if they want, but the Miyabi is typically worlds sharper than anything they have anyway, so that usually does the job.
