    WTB Kambei wide bevel gyutos

From what I remember - Kambei is Morihiro

    Tsunehisa G3 Ginsan Gyuto 210mm

I've had experience with these Tosa knives in both Haruyuki and Hitohira form. The AS Kurouchi is nice, but the Ginsan really really stands out. It's nice on the stones, sharpens well, and feels really nimble. Really can't beat that knife at the price point that Tsunehisa offers it at. Me...

    Wakui vs Hinoura

Decision might have been made for you. I went to go take a look at the Wakui as I've never seen anything beyond their hairline stuff, and it's sold out already.

    Suggestion needed for a gyuto

Hard to beat Wakui for the price. Toshihiro Wakui White #2 Gyuto 210mm Magnolia Handle Tanaka Ginsan is also a good place to look as well. Bit out of your price range and a bit longer than asked, but the Morihei has a nice height and is pretty solid on its own. Morihei Hisamoto White #1...

Your favourite size Gyuto and why ?

Most of the 240s in my collection aren't significantly bigger than my 210s, and with nimbler makes, like Wakui or laser-style Konosukes, the balance doesn't feel too far different either. Both are nice.

Mark Your Calendars - Nov 16th

Probably bots at this rate. Especially with only one of each knife, that's the only way I can explain how fast stuff went.

Mark Your Calendars - Nov 16th

Yeah the 270 that sold was Kasumi. The previous one I saw was 100% a Wa Kitaeji 180. This was the URL I had saved Shigefusa Kitaeji Gyuto 180mm I wonder if it was mislisted because the original page never had any details

Mark Your Calendars - Nov 16th

I think it was a Wa handle 180 gyuto. But yeah, I swear I saw one but I guess it was mis-listed. The 270 Gyuto and KU Nakiri were definitely on sale this morning, but the 270 sold and disappeared before I could check out with it. Looks like unlike previous garage sales, item listings get...

I swear I saw a Shig 180 kitaeji gyuto on there. Now there's only the 270mm. Pity.

    Grooves on upper blade?

Definitely my first time seeing a fuller on a J knife, but also odd that the exact same stylized fuller are on K&S sayas

    Grooves on upper blade?

A friend of mine sent this photo to me, asking if I knew what the grooves struck into the blade were for. It completely escaped me, so I figured I'd turn to KKF for answers. Any wisdom to be shared? The only place we've seen similar grooves and holes are on K&S sayas

    Shorter mid-heavyweight gyuto

From what I've seen and heard, the Morihei Kiyomitsu SKD has really good heft to it.
