    Ask him why he no longer has his smiths make his brand the same way when reviewed by zknives almost ten years ago for what I think was 50 dollars less. Bring a tall carrot and your favorite gyuto for a comparison. Caution...lots of charisma and little English ...or less than what he might lead...

    Suggestion...post thickness above edge,midway to spine, and at spine...all at the heel end. Even better, repeat at half way in blade length, and again closer to distal end. Best way to express geometry.

    vg10 or aebL 150ish mm for gift

    Mark, The santoku by Tojiro Dp/170mm is 6.8 ounces....while the cutco santoku is 6.6 ounces. Tojiro, unfortunately, does not carry a true (tall) utility knife at 150mm. Mark R. carries the line at decent prices....the weight is my issue. A shorter santoku might have made the difference.
