    My choice (for today ;-): - Mune 210 Honyaki Gyuto (light, agile, resistant ...) - Takeda 150 Petty (one of the first, still used and this AS Takeda steel ... ;-) - Kato KU 150 Nakiri (slightly heavier, but very useful)

    I have Toyama 180 Nakiri SS and 210 Gyuto SS. I really like to use them, but I don't like to look at them - the lack of patina is so boring. I will definitely go to Dammy. Did anyone meet Toyama Nakiri Dammy?
