Ordering directly from Japan in current climate

You guys are so lucky.. in Israel, every package valued over $75 is charged 17% VAT. Some items, like electronics will be charged an extra 33% (!!!) of the order value (they also calculate shipping costs in the total). When using DHL, or any other private courier, an extra 3-10% will be charged...

    WTS Uchigumori

Will this fit as a first Jnat? Can I get a working kitchen use edge using it or is it mainly for polishing purposes? And most important, can you do DHL to Israel?

    J-Nat Questions

I like your approach, Tanaka VG10 grinds are a perfect example of this school of thought in that they are thin bte but fat enough just to support those last 2-3mm for prolonged use, I'll normally add a micro bevel just to delay the next sharpening session, I might lose the ability to whittle...

    What would improve my setup?

For what it's worth, if you're not set on Shaptons, Choseta 3k is a bomb on VG10 (Tanaka, at least), might be too refined for generic stainless though.

Thinning and and a sandpaper 'Migaki' finish on my TF gyuto

Spot on Ian. Just one experience with iron cladding, I had to work some mud using SS, otherwise I just fiddled with it too much for it to start working. Some Cho 400 mud (really small amount, just like 10-20 seconds just the way you would flatten a stone) worked well too and gave me a good 15-20...

Thinning and and a sandpaper 'Migaki' finish on my TF gyuto

I've heard a lot of people with the same experience, Try working some stainless steel on it to open it up (although I suspect it just might stink with iron clad), it might sound weird, but this stone does wonders in thinning ***** ass SS, found that it takes very light pressure to get it working...

    Other The Best Damn Guacamole

Very common in here, shawarma stands will almost always have this, I love it.

Thinning and and a sandpaper 'Migaki' finish on my TF gyuto

Damn bro, 5 hours 😲 Lately with the quarantine and kids getting crazier by the day, I've had the chance to.. like.. touch up the microbevel...? Mad props!!!

    Other The Best Damn Guacamole

Close to mine, love it. The last few times I tried making it a guac paste, so instead of all the chopping work, threw all ingredients to the blender and gave a few gentle spins. Coolest trick ever if you're trying to preserve it for more than 2 days in the fridge - take 1/4 the amount of lime...

Haven't gone beyond 1k grit in a while

Are you talking about food release? I was under the impression higher grits tend to be stickier..?

Whats cooking? **** Making something fine and fancy?** Just plain good? Show us!

I hate to be showing off the same dish again, but it really is a wife favorite, and I really upped my game with the stock. Used yellow and regular carrots, potatoes, celery, celery root, onions, garlic, parsley root, maggie tomatoes and celtuce, which I found rather interesting. As a bonus, kids...

Ordering directly from Japan in current climate

So true. When it comes to costs, they're sssholes, but damn are they fast. The delivery guy called me when I was taking a walk with the kids, so he came to the playground (the closed and sad playground, at that) to hand me the package. So awesome.. Walking with a one and a 3 year old and a box...

Ordering directly from Japan in current climate

I received a Bunka from Watanabe, he used DHL, took 5 days from Japan to Israel (!!!). They'll usually overcharge handling fees but it seems the only way to go these days. I had ordered an Asahi cutting board from Rakuten, they seem to be using EMS as the order was just cancelled.

It's a lazy Thursday dinner. Had to test my new Wat on a sirloin. Meat is from Golan Heights and is superb.
