    This is a riff on the Danish dish "Brændende Kærlighed". In its most basic form it's just mash topped with bacon and onion, but I made mine posh by adding roasted carrots and purple hispi cabbage on the side...

    Have you tried opening the dough in semolina flour? I was having trouble as well, but that really helped. I know it looks like a lot of flour, but even a small amount will do the trick as well and help the pizza slide of the peel so much easier..

    Roast pork shank. 4 hours in a low oven then 15 minutes at high temp to crack the crackling.
