    Cerax 320

If it feels quite harder, does load some with carbon/iron clad blades even with copious splashes for little dishing, and/or otherwise initially presents with a watery-swarf slurry, it’s much more probable to be a mislabelled 1K. If it goes into a thick mud even with copious water splashes and...

    Cerax 320

Or it could be a mislabeled 1K. It very much looks like it. You could ask Suehiro for clarifications. They’ve been known to master a rough english.

    Cerax 320

It has the correct code to a Cerax #320. IIRC 401 is the 29mm thick. However indeed the #320 is usually blue-grey. However, as Jon Broida once said, colors can be varied pretty easily, and are usually used mostly to distinguish stones. It could be that Suehiro decided to turn all of the "Old"...

    Hasegawa Sorrows

I had a cheaper variation from some generic brand or another of that kind of board that basically fast-forwarded your obviously much more belated feature. That's when I realized, I'd never seen that **** happen with a quality wood board, and if it had to happen, I'd be much more straightforward...

Notable makers primarily using stainless cladding w/carbon core - why?

In my book then a palpable improvement to all « low carbon » clads I ever had still. 😊

    Knife findings

Well, on the contrary it looks like it in that of a job it is clearly focused mostly in the smoothing of the slope to blade rather than in making a seamless bolster integration. With the very same kind of clearer streaks patterns all along the slope. Looks like dumbass smoothing but if balance...

    Knife findings

Looks like a TF kind of bolster job, of a general stance... looks awkward but might feel smooth and nicely integrating blade to handle for a rather sloppy job. However there's a clear indicator of TF being an integral blade at least. whereas these Greenfield look like soldered on.

    Unpopular opinions

Not chippy being a good start but what I was aiming at mostly is that maker doesn’t necessarily means flawless and I’d just like to hear about @blokey experience before dismissing it as such. Also, I remember a general opinion being more so-so about ZKramer units, although I’d figure most would...

    Unpopular opinions

The other way around, I'd suppose prelam A#2 in a subpar batch - IF not the maker. But I'd indeed be curious to know what 52100 unit was subpar. Except perhaps ZKramer or some obscure custom maker without a clue. Not to dismiss @blokey experience, but rather because I think I ought to hear...

Notable makers primarily using stainless cladding w/carbon core - why?

I loved Matt's idea of cladding Apex Ultra in low carbon steel. I mean, if only for the reason that we'll get to see just how corrosion enhanced Apex Ultra is. Otherwise, because it promises to be the lowest maintenance to have ever existed.

But then if you really ask me... Mono 52100 FTW.

Notable makers primarily using stainless cladding w/carbon core - why?

On the other hand, if you'd tell me that there were only iron clads Aogami left in the world, I'd be like, yeah! Especially if some of those makers I so totally love in SS clad would start making an iron clad as readily available instead. I'm still glad SS clads exist there, because well for one...

Notable makers primarily using stainless cladding w/carbon core - why?

Same here! And not particularly referring to you. I used first person with that particular rusting point because I, like you, never had any rust problem indeed. However, I do find White steels to be particularly prone to discoloration (food and themselves) only to generate an ugly brownish...

Notable makers primarily using stainless cladding w/carbon core - why?

As always, 50/50. There is some kind of a vehemence with those that prefer iron clad though. It may seem overwhelming. It's superior and I have no rust issue ever and SS clad is mostly a market trend designed for "common" people. Like if you don't swear by it, then you're necessarily no hardcore...

    Hatsukokoro Yoake impressions?

Mine is best defined by a poor fit, good feel in hand, and so-so performance. I seem to gather that while the two first points are relatively consistent in general, one might get much luckier with the third.

Notable makers primarily using stainless cladding w/carbon core - why?

I don't know that there would be a KKF consensus for iron clad. This topic has often been adressed and at best it's around 50/50. If you ask me, I'll never buy White steel in iron clad again. But I own some Blue steel and it's fine. I'd generally prefer SS clad. But as the maker see fit is...

Alternatives to KUROSAKI SG2 SHIZUKU GYUTO 180MM

But while at it, also forget about the "high carbon steel" marketing gimmick they use to sell western type trash because it will confuse ppl/get you confused. Around here, when we say "carbon steel" we're talking classification, and SG2 is no carbon steel, it's PM. Western type trash is simply...

    All Rectangle March?

Ain’t there even a countdown thread started about it? If it doesn’t happen I don’t see what can happen.

This is the internet. Where are the cats?

See the catch? This time of year it’s not where they’re at it’s how the **** to get them away from there.
