You are right. I have the migaki Kyuzo, Kasumi Togashi and Yohei. I like the kasumi finish more from a cosmetics perspective. Just assumed Kyuzo makes the kasumi version as well since Togashi makes both.

Awesome blades! Congrats! How do these three compare cutting performance wise?

Thank you. Is it fair to say you are talking about modern manufacturing and branding practices rather than history / design origins of the Japanese kitchen knives that are on the market today? For example, I understand the traditional Japanese kitchen knives (the design, not the forging...

Can you elaborate on the “Japanese heritage” part in relation to the Chinese knives that you own? Would love to see a picture too if possible

nice. the KU seems to be polished off. is it just because of lighting and the angle of the picture?

Will do. Do you know if Will's shiro 2 is pretty much the same as the white#2 steel the Japanese makers use? The coverage of the stainless clad seems interesting. I couldn't decide whether I will like the look after the exposed part turns blue.

Someone snagged the shiro 2 while I had both in my cart as I couldn't decide which one to get...I ended up buying the 52100. I actually really wanted to try the nitro-V, but someone bought that one pretty quickly after the drop. I never owned or tried any 52100. hope I made a good decision...

How do you order one? I don’t see it as an option on their direct site.

Agree it is not a deal, but way better than Tsubaya’s pricing. Free shipping in Canada too. Taiyuan’s charges something like USD 60.

Anyone knows why Tsubaya’s price is so much higher than normal retail? I’m wondering if the price is the same in store or with a Japanese IP address…maybe someone has VPN can check…I like Tsubaya a lot but the price is a bit crazy…
