    Ok thanks, makes perfect sense, silly me!,... I'm new but doing my homework! I 've watched nikiri videos and they all seem to push cut with them, I've not seen folks rocking them, I would have thought they would be not great for that with the flat profile? cheers

    just home cooking, just wondering... i've only just bought my first knife, a Shibata R2 gyuto but am always browsing and learning for future additions, the shib is very smooth sides of the blade (as are all my previous knives) Looking at some of the hammered ones it looks like your knuckles...

    hi as mentioned this could be a stupid question but.... do the dimbles and roughness catch or drag on your knuckles of a claw grip Id imagine they dont or no-one would buy them but just looking at some knives they look as if they would? rgds

    Just got a reply from Shibata website... Thank you for using Koutetsu. If you purchased it more than 5 years ago, it was sharpened by 800 and 8000. If within 5 years, 400 and 4000.

    well i suppose the question is should i follow suit? not that i can probably, im a novice with an SP1000 and not a lot else, im not obsessed with the issue but i suppose im just afraid that ill never experience the ootb edge again?

    Hi So I noticed a couple of youtube videos talking about takayuki Shibatas sharpening method (knifewear and Never a dull moment) where he does an 800 on one dude side and a high grit stone on the other, would that be the way my R2 gyuto came ootb? Just curious, thanks

    So, I've heard I should oil the handle straight away as they come pretty dry...true? ( I wouldn't know any better, first wa handle) also, I know it won't need to see a stone but a strop now and then? I don't own a strip or compound, what should I get? Budget friendly for now please? No issue...
