    When everyone refers to hard stop in relation to Krichbaum and Yoshikane, is this an issue for rock chopping only? I’ve never encountered this, but I don’t rock chop at all unless it’s to mince an ingredient that needs to be incorporated into something else. I’m guessing that this design is fine...

    Reading this, I’m glad I didn’t buy the b stock Hinoura for my first bevel setting job. Sounds like they ante not a good candicdate for that? I have an Hinoura nashiji/ku and It isn’t concave though? I am interested in learning to set geometry (not polishing yet - that can come down the track)...

    Wo Wow! I knew if anyone had done it …. Wow, so my hunch was right! Looks stunning! Was thinking of getting one of the b stock hinouras from pro tooling but hesitates too long! I have a Hinoura santoku and I always look at the bevels and think, there’s something special lurking here!

    They’re annoyingly short. The 270mm is 49.5mm. I’d get one rather than an FM if they had comparable dimensions, despite the poor handles and FF. I should say that I have shorter knives that I really enjoy! But for that particular configuration and with Myojin’s grind, I’d prefer FM or tetsujin...
