    It went super fast. It was a really early piece of his, no maker's mark, but a great performer all around. I'm sorry you missed this one but when you do pick one of his knives up I don't think you'll regret it.

    What would be your recommendation for a mono carbon? I love the long flat spot and geometry of the Yoshikane gyuto, which is why I’ve been using it as my de facto slicer recently.
