SOLD Tetsujin Hamono "Metal Flow" Kiritsuke Gyuto 240mm

May I ask what knife you are using more often? I have a Tetsujin and it is the best performing knife in my collection.

Can you post choil shot and distal taper? How is the performance on the onion? I want to fly through the onion without any resistance or stiction.

Yes that’s right. Do you feel it performance wise and is the knife worth it if you expect the same performance as with a Tetsujin? I like to cut onions effortlessly into small cubes.

    Y. Tanaka x Kyuzo Kiritsuke I got into this thread about 3-4 months ago, started somewhere in the middle and scrolled through every page when I had some time to kill. Today I am finally done. Now it’s time to post my latest knife. I sliced some onions and seared chicken breast for blue...

Konosuke HD2 Gyuto arrived with inconsistent edge

The thickness at .5 inches from the tip is about .85 - .95mm. Where did you found this measure? I was not able to find it.

Konosuke HD2 Gyuto arrived with inconsistent edge

I am able to cut a paper with the tip and the cut looks almost clean, but it is not so smooth and I can feel some resistance. I tried to cut the arm hair and it was not possible with the tip and also not easy with the back part of the knife... So it is maybe a grinding problem?

Konosuke HD2 Gyuto arrived with inconsistent edge

Thank you for the recommendation. Honestly, I don’t want to modify anything from this knife anymore. I sharpened it with a 3000 stone and used a leather strop, the result is very sharp. But is your Konosuke also extremely wedging when you are cutting an onion with the tip? I think there is a...

Konosuke HD2 Gyuto arrived with inconsistent edge

It penetrates the onion (not easily) and is then wedging... I have no idea what that means. Thanks for the thread, I will check it.

Konosuke HD2 Gyuto arrived with inconsistent edge

I actually think the taper is good. I read so much positive about this knife and I don’t think it is possible that other people received the same. It takes way too much force to cut an onion with the tip.
