    I agree with your assessment. I looked on Amazon and also B&H Photo websites. There are many options. Is the 10x power adequate? Power ranges from 10x and up are readily available. Some others here seem to think 20x is a good choice. Thanks for your input

    Which of his Zwilling chefs knives would you recommend. Zwilling offers Stainless Steel, Carbon Steel and Damascus. I’m a big guy and quite used to hefty German knives. I have a few Western 8”. Should I go bigger on the ZK?

    How much should I expect to spend to get into sharpening?

    If I had to start over I would have tried the King 1000 first with a flattening plate. Heard very good things about it. I bought a few other stones but only working with a Chosera 800 right now until I learn how to use it. Going reasonably well. You might like it too. Good luck

    Thanks for all the good info. Don’t know if I will end up using my Shuns, but I went onto the Kia/Shun website and now have all of mine boxed up and ready to ship to Oregon. Will see how they handle the chip repairs and sharpening. Wonder how long it will take.
