lets have a new razor thread.

The shaving went smooth off the natural. Definitely the most time consuming part of honing was flattening the stones to be appropriate for razors. The third razor in need of honing I put across the loaded balsa strop a few times and it immediately passed the HHT. So I bought a fine weave cotton...

lets have a new razor thread.

I took a second razor down to Aizu and back up. I had previously very successfully ruined the edge stropping with too much pressure. After the Ozuku and bare leather it did pass the HHT but barely. I would be generous to myself and say it is partly due to my very fine hair but I just got a...

lets have a new razor thread.

I have just read this whole thread again in preparation of honing a razor for the first time. I have been shaving for a little bit now working through 3 vintage razors and figuring out shaving technique. The hardest part so far for me has been the stropping. I have been getting good results...

Sauce on top, the Italian-American way

I worked with a chef from Bergamo and he would toss the pasta with butter before adding it to the sauce. I prefer quality olive oil over butter for fresh quick cooked tomato sauces. For a saucy texture I would use San Marzano. If you need that fresh edge use both fresh and canned. Not all...

    Knife Tatoo

I hate to say it but we may have been the same person until like 2005. And maybe haven’t diverged all that much since. :)

    Main plate PAELLA

I think it takes a couple times to get the soccarat nailed. I have realized that I can hear it now. Have to take into account the carryover heat from the pan. This is my DIY setup but it gets good results. This is from a few years ago. I am starting to get it dialed now.

    Show your newest knife buy

I would buy a Shig to pull the handle off if I could get Stefan Keller to do the project.

what length paring knife do you like?

I bought that 5” Mac you mentioned for my mother. She loves it and I use it at her house when I am there. I think it is a great knife. That being said, my favorite paring knife is a Harner just barely over 3.5”. The classic sabatier profile with the coke bottle handle one he developed with...

Cutting food in the sheet pan. Ugh.

Ok. I’ll have to track down the Mac. It’s probably in a knife roll somewhere. I bought the Hello Kitty too.

Cutting food in the sheet pan. Ugh.

Cutting food in the sheet pan. Ugh.

This is what’s in the drawer. I have a few others squirreled away somewhere. I know I have another Harner, Mac, and a Sakai Yusuke Wa but not sure where.

Cutting food in the sheet pan. Ugh.

Should have known the answer was more knives! I have a pretty small knife drawer in the kitchen but probably 10 knives under 150mm in it.

Cutting food in the sheet pan. Ugh.

The pan seems alright. Just scratching and hurt feelings. I haven’t really sharpened a knife in a while. I am going to do that paring knife this weekend. I might get a complaint. When I sharpen the everyday knives they usually end up being ‘too sharp’.

Cutting food in the sheet pan. Ugh.

That’s true. That would be a first for me.

Cutting food in the sheet pan. Ugh.

Speaking of Mac, this one makes a pretty good sheet pan and peanut butter knife.

Cutting food in the sheet pan. Ugh.

She used to be a pastry chef and has a Delbert Ealy parer that was sacrificed to sheet pans and dowels years ago. It’s the western deba of paring knives. I just really like this Marko for strawberries.
