How to Sharpen a Victorinox Santoku ?

Make sure it's rinsed and properly dry when you're done with it, before storing it away. If you need to use it again before it's completely dry, just follow the normal soaking procedure as if it was dry.

    225 gyutos, who makes em?

Misono does overlong (210 = 220) and Masahiro tends to. Just received a Matsubara that was sold as a 225mm. Didn't see that one anywhere else when cross checking the price though. First hand it's a 230mm.

How to Sharpen a Victorinox Santoku ?

He on the other hand had the right to quote me since he’s the original word to my paraphrasing. :D

Finally my order from SKS got in... almost a month folks, horrible shipping delays these days. I'm glad I received the Atoma 140, my stones need a good clean. But now this showpiece... 300mm Takeda Honyaki :D Higonokami. Cute price, cute friction folding knife, and a different steel...

"PM sent"- should this be taken out of BST

Two knives sold lately. Not any of the two after a "PM sent". Did get a "PM sent". Never got an answer after answering. Knife is still up for sale. Someone else has PM me about it - without saying so in my post. He could probably be a more serious buyer is my first instinct. I don't care...

How to Sharpen a Victorinox Santoku ?

For paraphrasing someone who knows better than me: because the refined edge won’t hold, since the matrix is weakened behind the edge. I think it has to do with big carbides vs fine abrasive but don’t quote me.

    What does? What's "this"

Different stone or grit, that is the question...

Well it seems to me that I can even deburr - at least the most of the job - just lightening pressure on the SP320 even - but I'm far to be mastering this yet, so I guess when I say "deburr" and when more experienced sharpeners say "deburr", there is certainly a gap, perhaps even an ideology of...

Different stone or grit, that is the question...

I'm having doubts with the SG500. Every word M1k3 spoke seems true, steampunk says the same in his reviews; however it seems to be a quite particular stone to which the best uses don't quite correlate my own. The uses it lends itself that do fit my requirements are also working nice for me on...

Different stone or grit, that is the question...

Perhaps but as long as it holds together, why not shave the very last possible mm out of it? It's a "complaint" I've heard more than once, so I guess that point comes sooner or later. However I can always put another stone as a riser as been mentioned, which works for me, or cut it like others...

Different stone or grit, that is the question...

Another question I might have is, considering I'll have an Atoma soon, should I still look into something like a Nagura? Or use the atoma, or a stone eraser, or just another stone? Also... Naniwa stone holder... do I need one? I keep getting mixed reviews of this... rubber stinks, rods...

Oh that's it then? I didn't feel any pull towards going for more information and spending a thousand dollars in J-Nats... Phew!... 😅 Thanks @M1k3

Why do you advise the latter - what do you like about it? Any comparative experience with the SG500?

I was all ready to click that little purchase button. Will go back to scanning a little more. At once read the rest of Steampunk thread for the very least. I will however click that purchase button. This order isn't going to change. The NP800 is set. Advised by one person I trust very...
