Home Use Suji - Preferred Length?

    270 or 300. I have a 300mm. I also have a 210 but it's really used more like a long petty than a traditional suji.

I want to buy a custom knife direct from a Japanese Maker

That is why I posted this question. Looking for maker that would be willing to meet. When you are willing to spend a few grand on a piece of art, it would be nice to meet the person who made it.

I want to buy a custom knife direct from a Japanese Maker

One of my friends, who is one of the top sushi chefs in Austin right now (fully booked 5 months out), wants to buy a honyaki sakimaru takohiki from a Japanese maker. He wants to buy direct from the maker when he can travel to Japan again. Nothing like personally interacting with the craftsmen...

Any espresso machine technicians out there? Or serious nerds?

Any espresso machine technicians out there? Or serious nerds?

Double boiler machines are not inherently more stable. There is no temperature surfing with my Rocket HX with a PID since Rocket modifies their E61 grouphead to avoid overheating. BTW, with a double boiler, you actually have to do a warming flush if you have a standard E61 grouphead. Since the...

Any espresso machine technicians out there? Or serious nerds?

People get too crazy with the advantage of a double boiler. The second boiler is for milk, so if your not into milk drinks, its a waste. If you are I to milk drinks, you really can't tastes the subtle notes of coffee. I have a Rocket Giotto HX with PiD and La spaziale S1 mini double boiler. I...
