    An Ode to the Commercial Beater Knife

    I've been using a "carbonext" chef knife from jck for years, it's beaten up and sharpened to half it's original size. Really need to replace with something similar. I keep a konesuke HD stashed away for portioning fish, my only decent knife that goes to work.

    The Knife I Will Never List on BST.........

    Any of the knives I still have from my original apprentice kit. Mostly Wusthof and Felix solingen cost a fortune to a 16 year old earning $3.43 an hour. Obviously have a strong sentimental attachment.

    The finish does seem to vary a little bit on Shigs , a couple of mine have quite rough Kanji stamps, but the knives are no different overall than others from the same maker. This is the chance you take buying handmade tools sight unseen . The salmon dishes look delish!
